I usually fillet the fillet. by that i mean if the fillet is say 10mm thick i cut it down to 5mm and either throw it under a griller or grill it on a hotplate like the chips shops do .mm mm mmm mmmmmm mmmm
Cut flesh into 1" cubes. Put plain flour in a plastic bag. Place fish cubes in bag, inflate it, twist the top and give bag a good shake to coat fish with flour. Heat deep fryer to high. Fry fish for about 1 1/2 minutes.
