This particular longtail is going to be trialled in some fish cakes and a curry or two (mmmm...laksa). I've tried it pan fried, and although not terrible, it's not the best fish around by a long shot. I had planned to try it as sushi, but my esky wasn't quite big enough for the trip home so I had to make do with filling the yak hold with ice, and too much of it melted on the trip home for me to trust the flesh raw. :(

As Sunshiner said, we tend to share it around with friends and family too, and if anything is left over it can always be used for bait.

Was a great day out there guys it was 2hrs of fishing bliss. I was at little halls by myself all you guys seamed to head to halls.
I hooked 4 in 2 hours had two of them throw the hooks. I brought one home around 7kg and had the last one that would have been over 10kg get eaten by a 7ft tiger shark only 3m or so under me.
I wasnt too impressed after fighting it for 45min and almost having it onboard but after pulling in the head and having myself and my kayak cover in blood i was glad the two sharks that came up only had a look.
So with the sharks close by and fish off the bite i headed home and found $50 floating at middle groin was a great day.

I've eaten it only three times. Once in a curry where it was tasty, once pan fried where it was not in the spotty class, but OK, and recently at SWR where Grant Ashwell cooked it for moments each side on a BBQ, with the minimal preparation of lemon juice marinating. It was still pink in the middle and was appreciated by all....the best I've ever tasted.

Grant's Guide to Fishes says this: "This is quite a worthwhile table fish; the skinned dark-meat fillets should be blanched by dipping in hot (but not boiling) water for only seconds, when they can be deepfried, grilled, or (best of all) barbequed."

Has anyone tried this method? It would be interesting to hear of other cooking methods too, and the verdict on taste.

I put some of my longtail in a slow cooked laksa yesterday and was pleased with the results. There was no mistaking it was tuna, but it had my ten year old asking for more and that in itself speaks volumes. :D

I bet it would come up nice bottled.
I have used the method of boiling, then placing in a sterile jar, covering with olive oil and sealing.
Even mac tuna comes up good like this.

If you bottle it in that way does it make it suitable for sandwiches etc? I was going to look into how to prepare it for use in old faves like tuna casseroles and sangas with mayo, and that sounds promising.

It's just like tinned tuna but better.
You can add herbs and spices or whatever into each jar for variety.

Someone on the forum gave me the recipe, i'll see if i can find it, but it is pretty much as above.
I cut it into strips to to cook it fast and bend it around into the jars.
I boil the jars and lids and a pair of tongs to keep it all sterile.

Ours only lasted 3 or 4 weeks before it was all eaten but I think as long as there is a dip in the lid (lid goes on while it is hot) then it is ok to eat.
