Most fish, as long as it's cooked...
It's almost too close to call, but if I was pushed I'd rate them as follows:
1: flathead - Fresh, steamed, unbeatable
2: leatherjacket - A very close 2nd. Firm, white and sweet.
3: garfish - Highly underrated. Awesome deep-fried, whole.
4: snook/short-finned pike - flaky, mild flavoured, very few bones.
5: bream - Very nice texture (better than snapper)
