Chilli Stingray

i found something by chance the other day and i wondered if any others had done the same.
i caught a stingray the other day about 45-50cm across and was told by a man next to me that they were delicious baked on coals with chilli, i tried it and it was actually really good
has anyone else ever done this and if so are there other ways of cooking stingray

warning: be careful of barbs.

Cut off the flaps, score them diagonally on each side skin on, and do the same on the bbq.

i'm thinking about trying it, but i havn't caught a stingray since i started using lures and got rid off my cast net... so don't hold your breath on my feedback :lol:

I've found them to be a little sweet for my taste - almost a sulphur-ish aftertaste too.

However, that was a river ray rather than a bay/ocean beast.

Just a tip, Rays produce a chemical called urea as do all the shark family, sometimes a Ray will smell of ammonia, this isn't harmful if the fish is fresh, to get rid of the smell we freeze the wings for a couple of days, after a freeze they will have no smell and taste great, we poach the wings or grill them, and serve with a black butter and caper sauce, very nice indeed!

That'll be the urea brother, freeze the wings, no more after taste or smell

Killing and bleeding right away helps keep the urea from becoming too much of a problem (at least in sharks, but would assume the same with rays).

Yeah tried the stingray on the menu once in London - thought some one had pissed on my meal and sent it back to the kitchen with those words... :shock: :shock:

Yep down south in the tropics! We eat alot of them,just make sure you bleed them just like a gummy straight away and you don`t have to freeze them.Deep fry them in a beer batter or throw the flaps on a hot bbq for 5mins a side and you will think twice about throwing them back.

Being known with the unfortunate noma of "Stingray Master" in another forum, I'm finding this really interesting. Usually when I'm fishing for the elusive Jewies in the Clyde River I come up with a stack of rays and ALWAYS throw them back. But now I might keep one and check it out.

Question, does it matter what type of Ray? The ones in the Clyde are typically Whiptails.

Big Gee, make sure you cut behind the head on the top quiet deep to bleed them as soon as you land it and you will love them.If you can`t bleed them straight away cut the flaps off later and freeze them.
