In Qld you are allowed 1.2m overhang any more than that requires red flag or flashing lights at night if you like just google projecting loads there is a PDF on Dept of Transport site.

Have seen a few blokes with a small block of timber [3x2] with an angled cut to suit the yak bottom then attached to the bars and keel slides between to hold the boat upright until straps take the load, once the straps are firm it cannot roll over on the rack.

Jumaji does this with his P13 and travels at highway speed safely, Ryan I might have picture and will post here if I can find one.

My first kayak trailer was a modified box trailer and I built a bolt on frame for the back but never used it as it caused a whole lot of issues with the balance of the trailer, flex or "bounce" so would suggest caution if you want to go that route. Unfortunately I can't offer to much advice as I just scrapped the frame and finally built a custom trailer for the yaks...

cheers

The 1.2m is maximum, also goes on overall length of vehicle and trailer, (not usually an issue with a box), more importantly the ratio between the length in front of and behind the axle.

details here.
